Rawsome: Veggie Salad and Cilantro Slime Dressing!

This salad is a rawsome vegan celebration of fresh shaved veggies and cilantro, miso, honey/agave slimey goodness that I could drink with a straw (not even a little bit kidding). I made it for a spectacular brunch that my dear friend was hosting for me and some fellow bloggers  to meet and bounce ideas around. Did I mention we also drank champaign and played croquet? Details, Details! Anyways, this salad was inspire by THIS  rainbow noodle recipe and can I just note that I am in love with the blog it came from. I used both a mandolin and a vegetable peeler to prepare the noodles/shaved veggies. Use what you have as both are suitable. Feel free to shave what ever veggies you want or have on hand. I used carrots, zucchini, and red bell pepper. Other choices might be portabello mushrooms, cucumbers or asparagus. Like always, get creative!  

Benefits of eating RAW(some)

  • High in Fiber- get regular
  • Vitamin and mineral dense- many are destroyed by heating/cooking
  • Aid in weight-loss and detoxifying the body- raw fruit and vegetables are low in calories and high in filling fiber

What you need:

Salad:

3 Carrots- shaved

3 zucchini- shaved

2 red bell peppers- shaved

sesame seeds and cilantro for garnish

Dressing:

1 1/2 Tbs miso paste

2 Tbs rice vinegar

1 1/4 Tbs agave or honey

1 1/2 Tbl toasted sesame oil

1 1/2 tsp lime juice

1 tsp toasted sesame

cilantro and green onion to taste – I used about 2 Tbl chopped cilantro and 1/4 Tbl green onion

Method:

Combine all shaved veggies into a large bowl and mix well. Combine all dressing ingredients but the herbs in a blender or magic bullet and blend until well combined. Add cilantro and green onions to taste. Drain the liquid and natural juices form the salad bowl and them pour the dressing over and mix well. Sprinkle with sesame seeds, garnish with cilantro and ENJOY!!!
